Au Jus
The perfect accompaniment for French dip sandwiches or beef dish that could use a little extra juice! It's made with beef drippings (if available), beef broth, and seasonings! Super easy way to jazz up any meal.

The Supply List
- 2 Cups Beef Broth - Low Sodium
- Beef Drippings (if available)
- 1 clove minced garlic
- Salt and pepper to taste
- 1 T Worcestershire
- ½ T Butter
- 1 T Flour or Arrowroot starch
- 1-2 T dry or medium dry sherry or a dry red wine (opt)
The Steps
Beef drippings: If you're able to get drippings from the beef you're cooking it's a great additive to the juice! If the drippings are in the bottom of a roasting pan, pour some broth into the pan and scrape the pan with a hard spatula. Then carefully transfer the liquid to the skillet and add the rest of the ingredients.
Add the beef broth, garlic, Worcestershire, butter, and sherry (if using). Add your flour or starch and whisk to combine. Maintain a low, steady simmer 5 minutes of so. The liquid should reduce by about half. Remember, it's more of a dipping juice than a gravy.
