This is cubed beef fat. Back fat is great for grinding with sausage (like with venison) or render it down into a high heat cooking and frying tallow. Suet is the prized fat that comes from around the kidneys. It has a very mild flavor and renders down into a beautifully light cooking and baking tallow. It is not recommended for grinding.
