This new cut comes from the bottom of the round, so it's naturally a bit leaner. With the same long muscle fiber structure as a flank steak its best cooked quickly at high heat and sliced across the grain. It would also do well as a long marinated steak (overnight or more) or for stir fry! Each cut weighs about 2lbs
